Recipe: Lauren Dangoor’s Superfood Chocolate Quinoa Crunch

This delicious snack is so quick and easy! The nutrients come from the superfood mix, cacao and quinoa puffs. Cacao is the purest form of chocolate and is rich in antioxidants. Quinoa puffs are made by very gently heating the quinoa grains until they expand, and are packed with protein and dietary fibres.

Superfood Chocolate Quinoa Crunch

Preparation: 10 mins
Cooking: 20-30 mins

Ingredients:

  • 100g cacao butter
  • 30g cacao powder
  • 50g puffed quinoa
  • 2 tsp rice malt syrup
  • 4 tsp stevia powder
  • 2 tsp natural coconut milk
  • 2 tsp extra virgin coconut oil
  • 2 tsp raw organic honey
  • 1 tsp pure organic vanilla paste
  • Pinch of pink himalayan salt
  • Superfood mix: nuts, seeds, goji berries
  • Desiccated coconut


Method:

  1. Add the cacao butter to saucepan and melt at a medium heat.
  2. Add the cacao powder, salt, coconut oil, coconut milk, vanilla, rice malt syrup and stevia.
  3. Once all mixed in switch off heat and set aside. Let it cool.
  4. In another bowl add the quinoa puffs and mix in the honey.
  5. Add the quinoa mix to the saucepan and mix in to the chocolate sauce.
  6. With a tablespoon scoop out a bit of the mix and add it to the tray. The size and shape of the bars are completely up to you and how you lay it out on the tray.
  7. Sprinkle the desiccated coconut and superfood mix on top.
  8. Place in fridge for 20-30 mins until the chocolate hardens.
