Recipe: Naturally Meghan’s Raw Mint Chocolate Mousse

The combination of mint and chocolate has been a favourite of mine for as long as I can remember; mint chocolate chip ice cream, mint flavoured chocolate bars, creamy mint chocolate yoghurts – I used to love it all! I began eating a vegan diet focused on whole and natural foods about a year ago and of course I had to give up all the sugar-laden dairy products of my childhood. However, it’s completely possible to create plant-based meals, snacks and desserts which mimic the unhealthy foods that people are so reluctant to give up!
One such dessert is raw chocolate mousse – it contains as little as three ingredients and is incredibly quick and simple to throw together while giving the impression that a great deal of effort was put into it. I usually eat it plain but for this recipe I decided to add a few drops of peppermint extract to spice it up a little. The result was a deliciously rich and creamy dessert with a hint of refreshing mint – perfect!
Raw Mint Chocolate Mousse
Serves 2
Ingredients:
  • 1 avocado
  • 2 tbsp raw cacao powder
  • 2 – 4 tbsp liquid sweetener, to taste (I used rice syrup)
  • 2 – 3 drops peppermint extract, to taste
Method:
  1. Slice the avocado in half, scoop the flesh onto a plate and mash it with a fork until it’s completely smooth.
  2. Transfer the mashed avocado into a small bowl and mix in the raw cacao powder with a small whisk until there are no lumps of powder or bits of green showing.
  3. Whisk in the sweetener, tasting the mousse after each tablespoon.
  4. Once the mousse is at your desired sweetness add the peppermint extract and whisk again
  5. Transfer the mousse into two small dishes then pop them into the fridge for an hour or two to chill until you’re ready to serve.
  6. Enjoy!
