Recipe: Plant-Based Pixie’s Apple And Blackberry Oatmeal

London’s wellness scene is flourishing, and our Instagram feed is bursting at the seams with smoothie bowls, healthy pancake stacks and superfood salads. We’re celebrating the fact by continuing our regular recipe contribution from welltodo Londoners.

Following the recent success of London’s second ‘plant-based picnic’, where 60+ healthy eating Instagrammers converged on Tanya’s Café in Chelsea, we asked Pixie Turner (also known as @plantbased_pixe) to share an exclusive, autumn-inspired recipe. We’re betting that this will be a rainy Sunday morning favourite!

As the days get shorter and rainy days become ever more frequent, the colder temperatures in the morning have me craving something warm and comforting when I wake up. Apples and blackberries are definitely in season right now; I can barely walk anywhere without picking a handful of blackberries, and the apple trees in my garden are producing ripe fruit faster than I can eat them! What better way to make the most of them than by enjoying them for breakfast?! For me, oats will always be the perfect breakfast as they are so filling, healthy, and versatile, and adding some cinnamon to this really gets your metabolism fired up and ready to go!

Apple and Blackberry Oatmeal

Serves 1

Ingredients:

50g oats
200mL almond milk (or other plant milk of choice)
1 apple (about 100g) peeled and chopped
1 handful blackberries
1 tsp cinnamon
1 tsp maca (optional)

Instructions:

  1. Add the chopped apple to a pot with a generous splash of water and cook for a few minutes until nice and soft.
  2. Mash lightly with a fork, but keep some chunks!
  3. Add the rest of the ingredients and cook for a further 5 minutes or so until your oatmeal becomes thick and pink.
  4. Once it reaches the desired thickness just pour it into a bowl and top with your favourite fruit and nuts!
