Raw Coconut Porridge
Despite the current weather jumping daily from sunny and warm, to cold and wet (well it is England!), the days are still staying lighter later and my winter coat is well and truly now at the back of the wardrobe… giving me the perfect excuse to create tropical inspired breakfasts, for that wonderful holiday feeling!
My raw coconut porridge is simply one of my faves and really does taste like you’re on a tropical island and too good not to share. To make your own you’ll need:
- 1 cup of coconut meat
- 1.5 cups of coconut milk
- 1 cup of sunflower seeds
- 1/2 cup almonds
- 2 tbsp maple syrup
Add everything to your blender and pulse the ingredients, until you reach a porridge like consistency. Add toppings of your choice… goji berries and bee pollen went on ours.
